Blueberries are a super fruit packed with antioxidants and a great brain food! What better way to eat these than adding them to a muffin!
This recipe is quick, easy and delicious. Preheat your oven to 425 and gather your ingredients –
You will need:
- 2 cups flour
- 1/2 a cup of white sugar
- a dash of salt
- one tablespoon of baking powder
- one teaspoon of baking soda
- two eggs
- 1 cup of milk
- 1/4 cup vegetable oil
- two teaspoons of vanilla
- handful and a half of blueberries
Mix your dry ingredients together. Once mixed – add your milk, oil, eggs, and vanilla.
Then fold in your blueberries into the muffin batter. Don’t stir.
Scoop your blueberry batter into greased muffin cups or use muffin liners if you choose. Cook for about 15-20 minutes or until a nice light golden brown. You may insert a tooth pick to check for doneness. If toothpick comes out clean they are perfect!
Serve these delicious muffins hot for breakfast with butter or grab one and take on the go!
