This delicious muffin recipe puts a twist on the classic breakfast.
Preheat oven to 425 degrees
You will need:
- 2 cups flour
- 1/2 a cup of white sugar
- a dash of salt
- one tablespoon of baking powder
- one teaspoon of baking soda
- two eggs
- 1 cup milk
- 1/4 cup vegetable oil
- two teaspoons of vanilla
- white chocolate chips
- dried cranberries (or even fresh if in season)
Mix your dry ingredients – flour, sugar, salt, baking powder and baking soda
Add your eggs, milk, vanilla and oil and stir into your dry ingredients.
Add your cranberries and white chocolate chips. I did about 1/2 a cup of each. Don’t stir – gently fold into your muffin batter. Scoop into greased muffin pan or use muffin cups. Bake 15-20 minutes.
Enjoy for a quick breakfast on the go or just a snack! These muffins are delicious and taste amazing when served warm with butter!!
