I love breakfast. It’s probably my favorite meal of the day because I love making various breakfast “treats” for the family to enjoy. Especially when it includes fruit! Blueberries are delicious and my husband and I can pop them in our mouth like candy for a snack. They are super healthy for you as they are a “super fruit”. They are full of so many nutrients and antioxidants it’s great to incorporate them in recipes if you can and also if you are a fan of this cute little berry.
This recipe is very easy and quick to make. I was able to make 5 large biscuits using this recipe which was perfect for us since our baby Kallen is only 6 months and right now can’t enjoy these delectable breakfast treats.
- 2 cups of sifted flour
- 2 1/2 tablespoons of sugar
- dash of salt
- 1 tablespoon of baking powder
- 5 tablespoons of unsalted butter – leave cold and sliced into one tablespoon slab each
- 1/2 cup milk
- 2 tablespoons of milk set to side for brushing
- 1 egg
- 1 cup of blueberries (fresh or frozen)
First mix your flour, sugar, salt and baking powder. Then cut butter into the mixture until crumbly.
Next combine your one egg and 1/2 cup milk. Pour into your crumbly flour mixture and mix until well combined. You can knead the ingredients together on a flour surface as well.
Then gently fold your blueberries into the dough. Don’t smash or they will bleed into the dough if using fresh blueberries.
I then patted the dough down and cut my dough into 5 large pieces. You can cut into smaller triangles if you want more as well. Brush your biscuits with a little milk.
I baked in oven on 400 degrees until the tops were a little golden brown. They taste delicious warm and served with butter!!
