We all have those days where we want something delicious for breakfast, yet quick and ready for us to eat. Now I’m not talking cereal. Cereal can get a little boring some days. I’m talking a delicious hearty breakfast filled with eggs, bacon, cheese and hash browns – one bite of amazing flavor on your taste buds! I’m talking BREAKFAST BURRITOS!!!
This recipe is easy to make and makes five burritos – that way you have one for each day of the week!
- 10 slices of bacon (2 pieces per burrito)
- 2 cups cooked hash browns
- 8 eggs scrambled or more if you love your eggs
- 1 1/2 shredded cheese of your choice – I used Colby – Monterey Jack – I love cheese so I LOVE a lot of it
- 5 burrito size flour tortillas
First I cooked my bacon. Then I cooked my hash brown till a little golden brown on one side and then my scrambled eggs to the way I like them.
I warmed up my burrito sized tortillas. To make your burrito I put my hash browns down close to the bottom of one side of the tortilla. Don’t put too far down or you won’t be able to roll it properly. Then I put my scrambled eggs on top of the hash browns, then shredded cheese, bacon and rolled. Cover your filling with bottom of tortilla. Then fold the sides in and roll into your burrito! I sealed my burritos by placing into a pan lightly sprayed with cooking spray. I also browned the tops of the burritos as well!
They were delicious and easy and fun to make! Perfect for breakfast on the go as well!
