For the final recipe of BLUEBERRY WEEK on the blog is a delicious breakfast favorite in my house – Blueberry stuffed French toast! I always slice French bread for my French toast recipe and dip in a delicious egg batter and serve to my family with a side of fresh fruit. I wanted to do something different and actually incorporate fruit with the French toast so decided to give it a try with blueberries and let me tell you – it is amazing! Full of flavor and the taste of sweet warm blueberries is so good!

- 1 package of softened 8 oz cream cheese
- 1/4 cup brown sugar
- 2 teaspoons pure vanilla
- 1 cup blueberries
- 5 eggs
- 1 teaspoon pure vanilla
- 1 tablespoon brown sugar
You will also need
- half a loaf of French bread
Preheat oven to 350 degrees.
Combine your cream cheese, brown sugar and vanilla into a bowl. Mix well until smooth. Then gently fold in your blueberries.
Next mix your five eggs, brown sugar and vanilla together in a separate small bowl.
Then you will slice your French bread length wise to create a pocket. Put your blueberry cream cheese filling inside the pocket before placing into your baking dish. I used a bread loaf pan – it fit a half loaf of French bread perfectly.
Then I poured my egg mixture over the bread and gave it a few minutes to soak in a little bit before placing into the oven.
I then baked my little loaf until egg was fully cooked and bread golden brown. It should be easy to slice with filling oozing out for you to drizzle with your favorite syrup and top with additional fresh berries if you want! It is absolutely delicious!
