I love meals that are quick and easy – meals that you can just throw together in the oven all at once. How about you? My kiddos enjoy sausage – and shrimp! This was fun to make… EASY.. and smells amazing!
I went to Target to pick up a few groceries last week and saw this sausage and was like Oh my Gosh I need to try this! I love Cajun flavors and the good kick of spice that comes with it. It was really good paired with all the veggies and shrimp in this one pan wonder.
- 1 package of Hillshire Farm Cajun style andouille smoke sausage
- 1 pound of large shrimp
- 3-4 ears of corn chopped
- about 10 small red potatoes chopped (I like a lot of potatoes for leftovers and if you do use more)
- 4 tablespoons of butter
- seasonings of your choice – I use salt, garlic powder and pepper for my potatoes and Old Bay seasoning for my shrimp
Slice your sausages and place onto your non-stick sheet pan. I sprayed with non-stick Crisco cooking spray. De-vine and peel shrimp, rinse and season with your choice of seasonings. Your shrimp you want to save room on your pan but add during the last TEN minutes of cooking because shrimp cook quickly. You don’t want them overcooked.
Place your chopped corn onto your pan with your seasoned red potatoes. I like to add butter to my shrimp when cooking and also to my corn and potatoes. You can also drizzle your potatoes with a little olive oil as well if you want.
I baked in oven at 350 degrees until potatoes were almost tender then added my shrimp to the pan to cook then pull out to serve! Serving with white basmati rice is great too so you aren’t just eating potatoes – it just makes a good side dish for that shrimp and sausage! YUM!! This is definitely a dish I will make again for my family. We enjoyed it!!!
