This is the final recipe for pumpkin week!! Don’t worry! As fall hits and the holidays come closer I’m sure there will be more delicious desserts that include pumpkin! I love this dessert because I use a simple topping that I also use for my peach cobbler. It’s amazingly good and I think you’ll enjoy it!
This recipe is really easy to make and you’ll absolutely love it!
Preheat oven to 350 degrees.
These are the ingredients you will need:
- one regular can Libby’s pumpkin
- 2 eggs
- one regular can of evaporated milk
- 1 teaspoon ginger
- 2 tablespoons cinnamon
- 1 teaspoon nutmeg
- 1/2 cup sugar
- 2 tablespoons brown sugar
- 1 stick unsalted butter, softened
- 1 pack Duncan Hines yellow cake mix
First mix all your cobbler filling ingredients in a bowl and pour into your sprayed cooking pan.
In another bowl cut your stick of butter into your yellow cake mix until crumbly. This is your cobbler topping so spread evenly amongst your pumpkin filling. Then you will bake until topping is golden and filling is set. Bakes about 45 min to close to an hour.
This dessert taste amazing with whipped cream topping and served warm! You can even serve with a nice scoop of vanilla bean ice cream!
