I love quick and easy dinner meals. Tyson is definitely the way to go when you are busy with the kids, tired, and want a delicious meal. I love Tyson oven-roasted diced chicken breasts for a variety of recipes but one of my favorites are chicken lettuce wraps with my homemade chipotle lime dressing. They are amazing and SO simple to make. Also very quick to make if you are having a late night dinner.
These diced chicken breasts are already fully cooked. They just need to be heated from the freezer. I drizzle a little olive oil into the skillet and go!
YOU WILL NEED:
- 2 cups of Tyson oven roasted diced chicken breast
- can of corn
- can of black beans
- head of green lettuce leaf
- a cup of shredded cheese
- ingredients for my chipotle lime dressing (posted on my blog!)
You will need two pans – one for the beans and corn to heat up. The other for the chicken. Drizzle one pan lightly with olive oil and add your two cups of chicken and cook until hot all the way through and no longer frozen.
While the chicken is cooking and the beans and corn are heating up I tear off my lettuce leaves and rinse, then pat dry with a paper towel.
You can top your lettuce wraps with whatever you want but I love black beans and corn together for a southwest feel to it. I layer my lettuce wraps with the corn and beans mixture, chicken, the sprinkle with cheese and then top with my homemade chipotle dressing! The best part about these lettuce wraps is you can eat them with the toppings all cold and it will still be delicious!
